Yummy Veggie Dip

  • 3/4 cup 1% fat cottage cheese
  • 3 T low fat mayo
  • 2 medium carrots, peeled and grated
  • 3 small dill pickles, finely chopped
  • 1 T caraway seed
  • 1/4 tsp. Pepper
  • 1/2/ tsp. salt free Mrs. Dash Fine Ground
  • 1 tsp. parsley flakes
In a blender, combine cottage cheese and mayo, process until smooth.  In a bowl, mix with remaining ingredients.  (Do not process again in blender.)   Chill overnight.

You can serve with raw veggies, especially broccoli, cauliflower and carrots.

Makes 1 1/4 cups
