French Onion Soup has to be my FAVORITE soup in the world and whoever Henri is, we need to thank him for this FANTASTIC recipe!! Although it is a Vegetarian recipe, you CANNOT tell!! You still get all the great flavor as if you did use a meat based stock. So If you're having company over, double or triple this recipe because it only serves 6 which means ALL MINE!!

China Doll's Chicken Soup
- 2 OR 3 skinless chicken breasts with ribs
- 3 stalks celery
- 1 lb. carrots, sliced
- 1 large chopped onion
- 1/2 bunch fresh parsley, chopped
- 4 chicken bouillon cubes
Place all ingredients in pan with water until chicken is tender. Remove chicken, chop and discard bones. Return chicken to pot and season with salt and pepper to taste. Simmer on low heat for 1 hour.

Suzie's Spicy Black Bean Soup
Ingredients:
- 1/2 cup chopped onion
- 1 green pepper - chopped
- 1 cup celery - chopped
- 4-15 oz. cans black beans
- 1 cup chopped carrots
- 1 cup frozen corn
- 2 cloves chopped garlic
- 1 1/2 fresh tomatoes, chopped (or canned & chopped)
- 4 beef bullion cubes
- 1/2 T cumin
- 1/2 T oregano
- 1 T olive oil
Directions:
Saute onions, peppers, and celery in oil. Add remaining ingredients. Mix & simmer approx. 1 hour or until carrots are done.
