Ingredients:
• Cooking oil spray
• 1 cup mushrooms, chopped
• 3 cups chopped cauliflower
• 1/2 cup chopped sweet onions
• 1 tablespoon canola oil
• 2 teaspoons apple cider vinegar
• 2 teaspoons lemon juice
• 1/4 teaspoon fresh ground white pepper
• 1/2 teaspoon salt
• 2 cloves garlic, minced
• 1/4 cup chopped chives
Directions:
Preheat oven to 350°F. Spray baking dish with cooking oil spray.
Mix all ingredients and spread in baking dish. Bake uncovered for 45 minutes, stirring twice.
Garnish with chives and serve warm.
