Cheese Cake Filled Strawberries

OK,  this has got to be the best thing since sliced bread!!  OMG! who would of thunk it!! yummo! I'm not a huge fan of cheesecake because it's way too rich for my taste, but like this, I'm all for it!! 


Ingredients: 

  • 1 pound large strawberries 
  •  8oz. block of 98% fat free cream cheese – soft 
  •  3 – 4 tablespoons powdered sugar (depends on how sweet you want the filling) ( I would probably use Stevia (sugar substitute) because it's so fine anyway, almost looks like powdered sugar and no fat or calories!! 
  •  1 teaspoon vanilla extract (or use almond, lemon, etc. ) 
  •  Graham cracker crumbs
Directions: 
Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out inside with a paring knife if necessary. I found most of the strawberries already had a nice hollow center so that step was not necessary. If you want to stand your strawberries upright (like in the picture) slice a bit off the bottom. Once strawberries are prepped, set aside.

 Combine cream cheese, powdered sugar (or Stevia) and vanilla with a mixer or by hand. Add cream cheese mix to piping bag and fill strawberries. ( or you can put it in a ziplock bag, push it all in the corner, twist the bag, then snip off the tip..POOF..instant piping bag! )  Once strawberries are filled, dip the top in graham cracker crumbs. Devour and fall in love. You could also drizzle or dip strawberries in chocolate if desired. Enjoy!!! I stored my stuffed strawberries in the fridge although I find they taste best the day,or second after, they are made.
